Rolling your shoulders back and down during a lat pulldown is crucial for maximizing lat activation and avoiding injury by creating a stable base. This posture ensures your large latissimus dorsi muscles do the work, rather than your smaller upper traps and arms, by preventing your shoulders from shrugging or collapsing forward. Honey Garlic Salmon Recipe 👩🏽‍🍳

Ingredients
SAUCE
* 4 tbsp honey
* 2 tbsp soy sauce (all purpose or light soy sauce)
* 1 tbsp white vinegar (or sub with any other vinegar except balsamic)
* 1 large garlic clove (or 2 small) , minced
SALMON
* 2 salmon or trout fillets, skinless (6oz / 200g each)
* Olive oil
* Salt and pepper

Instructions
* Take salmon out of the fridge 20 minutes before cooking. Pat salmon skin dry with a paper towel and sprinkle with salt and pepper. 
* Whisk together the Sauce ingredients in a small bowl.
* Drizzle oil in a non stick fry pan and heat over medium high heat (or just under, if your stove runs hot). Place salmon in the pan, and cook the first side for 3 – 4 minutes until golden. Turn, then cook the other side for 2 – 3 minutes or until golden. 
* Pour Sauce over salmon. Cook for 1 minute or until it starts to thicken slightly. Check the side of the salmon to tell how cooked through the middle is – I like mine medium rare inside. (Note 1). If Sauce thickens too much before your salmon is cooked to your taste, just add water 1 tbsp at a time. 
* Remove onto serving plates. 
* Serve salmon drizzled with Sauce, sprinkled with sesame seeds and chives/shallots, if desired.

Today we are celebrating the transformation of the one and only (joke is she’s a twin 😂) Ellen!

As of today Ellen’s stats are:
〰️ Down 20.6 lbs
〰️ Down 5+ inches
〰️ Increased muscle mass
〰️ Lowered body fat
〰️ Enhanced strength

What’s Ellen’s secret?
Ellen has completely took control of her health and wellness by eliminating foods that cause her body inflammation and irritation. She realized how yucky she felt when eating processed foods and she simply eliminated it! She continues to monitor her health not only with nutrition but with routinely check-ups and blood work. Ellen is dotting all the i’s and crossing all of the t’s to make sure her body is in top notch shape!

Ellen also takes care of her body by attending Small Group Training on the regular. In session she’s working on building more muscle, strengthening her bones and improving her overall performance, being better than the day before!

She’s an ALL-Star!
She’s doing exactly what needs to be done!
She only complains about the A/C not being on twice a session. LOL

Join me in celebrating the transformation of our youngest member, Colton F. This young man has been a member of Empire for only 3 months, doing our custom workout program. As you can see, he’s crushing it!

Colton and his mother came to be with a mission of learning proper form in the gym, toning up and strengthening his athletic performance. He in fact is doing all the above! Since joining Empire, his muscle mass has increased. His form has drastically improved in his lifts. He’s doing phenomenal in baseball and has even received Player Of The Game this previous weekend.

Colton’s mother and I have tagged team on his nutrition, showing him the importance of protein and eating whole foods. From the kitchen, to the gym and on the field…Colton chose to become better in each area AND he’s doing just that!

This middle schooler is kicking butt this year. He’s certainly having the best year yet! I’m proud of this young man and all that he’s accomplished thus far. There’s more victories in store, he’s not done bringing the heat🔥🔥

One things for certain, life is unpredictable. It’s going to bring obstacles. Challenges big and small will pop up unannounced. Hard times are going to happen. How will you react? Just throw in the towel? Give up?

Today’s spotlight goes to one tough cookie! This woman here was smacked by life a few times. She’s survived a rough past. She’s beat cancer! She’s living with Lupus. The entire time an obstacle appeared, Tricia just kept on pushing through the challenges. She never let cancer stop her. She’s not letting Lupus control her. She’s simply not letting a bad moment win. EVER.

Because this fire cracker is determined to rise above
any Sh!tty curve ball thrown her way , she’s reaching goals sooner than later with a big smile on her face!

😍Today Tricia is down 16.6 lbs.
😍She’s dropped 7 inches.
😍Her strength has drastically improved.
😍Nutrition has done a 180.

👩🏽‍🍳Ground Turkey and Sweet Potato Skillet Delight

Ingredients:
1 lb (450g) ground turkey
2 medium sweet potatoes, peeled and diced
2 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp chili powder (optional, for heat)
1 cup kale or spinach, chopped
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Cook the Sweet Potatoes

Instructions:
Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced sweet potatoes and sauté for 8-10 minutes until softened and lightly browned. Remove from the skillet and set aside.
Brown the Turkey

In the same skillet, heat the remaining olive oil. Add ground turkey and cook for 5-7 minutes until browned and fully cooked, breaking it apart with a spoon.
Sauté Aromatics

Add onion and garlic to the skillet with the turkey. Sauté for 2-3 minutes until fragrant.
Season and Combine

Stir in smoked paprika, cumin, chili powder, salt, and pepper. Mix well.
Return the cooked sweet potatoes to the skillet and toss to combine.
Add Greens

Stir in chopped kale or spinach and cook for 2-3 minutes until wilted.
Serve

Mexican Shredded Crockpot Chicken

Ingredients:

4 boneless skinless chicken breasts
1 tablespoon taco seasoning
1 (12oz) jar your favorite salsa
1 can black beans, rinsed and drained

Instructions:
1. Add the chicken breasts to the bottom of the slow cooker. Sprinkle with the taco seasoning. Add the salsa and beans.
2. Cook on low for 6-8 hours or on high for 3-4 hours.
3. Remove the chicken to shred with two forks and return to the crockpot. Serve immediately in tacos, over rice or with a salad

One Pot Mexican Rice & Chicken

Ingredients:

MEXICAN SPICE MIX
* 2 tsp garlic powder (or 2 garlic cloves, minced)
* 2 tsp paprika
* 2 tsp cumin powder
* 1 3/4 tsp salt
* 1/2 tsp cayenne pepper (Note 1), optional
* Black pepper
CHICKEN
* 5 chicken thighs, bone-in, skin on (Notes 2 and 3)
* 2 tbsp olive oil
* 1 tbsp lime juice
RICE
* 1 small onion , peeled and diced (or 1/2 large)
* 1 garlic clove , minced
* 1 red capsicum (bell pepper), diced or sliced
* 1 cup long grain rice , uncooked (Note 4)
* 1 cup chicken stock/broth , low sodium (or vegetable stock)
* 3/4 cup tomato puree
* 1 can (400g/16oz) black beans , drained and rinsed (sub red kidney beans)
GARNISH
* 1 lime , plus extra to serve
* Coriander/cilantro
* Sliced jalapeño peppers (optional)

Turkey Spaghetti with Spaghetti Squash

Ingredients
* 1 large spaghetti squash , about 3 to 4 pounds
* 3 tablespoons olive oil , divided
* 1 large onion , chopped
* 1/2 teaspoon coarse salt
* 1 8-ounce package mushrooms, coarsely chopped
* 3 cloves garlic , chopped
* 1 pound ground turkey , chicken or beef
* 1 15-ounce can tomato sauce
* 2 tablespoons tomato paste
* 1 tablespoon balsamic vinegar
* 2 tablespoons chopped fresh basil
* 3 cups baby spinach or kale

Instructions
1. Preheat oven to 400°F. Cut spaghetti squash in half and use a spoon to scrape out the seeds. Brush 1 tablespoon olive oil on a baking sheet. Arrange squash, cut sides down on baking sheet. Place squash in oven an bake 35 minutes or until it can be pierced easily with a fork.
2. While squash is baking, add remaining olive oil to a large nonstick skillet and heat over medium high heat. Add onion and salt and cook 5 minutes or until softened.
3. Add mushrooms and garlic and cook 5 minutes, stirring occasionally, until mushrooms are tender.
4. Add ground turkey and cook 5 minutes, until turkey is no longer pink, stirring to break up turkey.
5. Add tomato sauce, tomato paste, balsmamic vinegar and basil. Bring to a boil over high heat. Reduce heat and simmer 10 minutes.
6. Stir in spinach and cook 1 minute or until wilted. 
7. Remove spaghetti squash from oven and cool for about 10 minutes or until cool enough to handle. Use a fork to gently pull the squash flesh from the peel and to separate the flesh into strands. The strands wrap around the squash horizontally — rake your fork in the same direction as the strands to make the longest “noodles”.
8. Serve the meat sauce over the spaghetti squash.

She’s attended Small Group Training at Empire religiously where she’s lifting pretty heavy 💪🏽. She’s hoped on board with custom meal plans where she’s learning the roles of various foods and how her body functions with them. She cut back on the alcohol consumption AND she started walking more during the week with her weighted vest! (She chose this accessory for herself I want to add. I didn’t have anything to do with the vest😂).

In a matter of months, the lifestyle changes she chose to make has made a very noticeable & positive impact to her health and life!

Cilantro Lime Chicken Thighs

Ingredients:
2 pounds boneless, skinless chicken thighs
1/2 cup olive oil
1/4 cup chopped fresh cilantro
1/4 cup lime juice
2 cloves minced garlic
1 teaspoon red pepper flakes
1 teaspoon cumin
1 teaspoon paprika
2 teaspoons salt
1/4 teaspoon black pepper

Instructions:

Add all of the ingredients, except the chicken thighs, to a small mixing bowl and whisk until well combined.
Next, add the chicken thighs to a large mixing bowl. Pour the marinade over the chicken and use kitchen tongs to toss the chicken until it is well coated in the marinade. Let the chicken marinate for 15 minutes uncovered or for up to 2 hours, covered, in the fridge.
Heat a skillet over medium-high heat. Once the skillet is hot, add a teaspoon of oil to the pan. Next add the chicken thighs and cook for five to six minutes per side or until no longer pink and the internal temperature reaches 165 degrees.
Once the chicken is finished cooking, transfer it to a serving dish. Squeeze extra fresh lime juice and sprinkle chopped cilantro over the chicken before serving. Enjoy!

The youngest member of Empire is bringing home a win in the fitness game! Usually we are celebrating Austin’s achievements in sports but today we are bringing it over to his health and fitness in celebration of his progress thus far!

Austin is:
- 5% body fat (his lowest ever)

- Visceral fat is at 1. (We can’t get any better 😂)
- Strength has continuously increased.

EASY One-Pan Beef + Cabbage Skillet

Ingredients
•1.5 pounds grass-fed ground beef
•1 sweet yellow onion, diced
•1 large green bell pepper, diced
•2/3 fresh garlic cloves, minced
•1 Tbsp smoked paprika
•1 tsp dried oregano
•1 large head green cabbage, chopped thinly
•1 (14.5-oz) jar diced tomatoes with juices
•2 Tbsps apple cider vinegar
•sea salt and fresh ground black pepper, to taste
•a small handful of fresh chopped parsley, or Italian parsley chopped to garnish

Instructions:
1. Heat a large skillet over medium heat. Add in your ground beef and cook until nicely browned about 5-6 minutes. Drain the excess fat and return the skillet to the stovetop.
2. Add in diced onion, bell pepper, garlic, paprika, oregano, a pinch of sea salt and pepper to taste, then cook, stirring frequently for 2-3 minutes.

EASY One-Pan Beef + Cabbage Skillet

Ingredients
•1.5 pounds grass-fed ground beef
•1 sweet yellow onion, diced
•1 large green bell pepper, diced
•2/3 fresh garlic cloves, minced
•1 Tbsp smoked paprika
•1 tsp dried oregano
•1 large head green cabbage, chopped thinly
•1 (14.5-oz) jar diced tomatoes with juices
•2 Tbsps apple cider vinegar
•sea salt and fresh ground black pepper, to taste
•a small handful of fresh chopped parsley, or Italian parsley chopped to garnish

Instructions:
1. Heat a large skillet over medium heat. Add in your ground beef and cook until nicely browned about 5-6 minutes. Drain the excess fat and return the skillet to the stovetop.
2. Add in diced onion, bell pepper, garlic, paprika, oregano, a pinch of sea salt and pepper to taste, then cook, stirring frequently for 2-3 minutes.

- 1½ pounds (680g) boneless, skinless chicken breasts
- ¼ cup (60ml) extra virgin olive oil
- 3 tablespoons fresh lemon juice
