Today we are kicking things off by celebrating the progress of personal training client, Collin. He’s officially 17 lbs down since joining Empire🥳!

How did he drop the weight? By applying the power of movement! His busy work schedule has him traveling often but, when he’s back home he making sure to hit the gym and has created a routine that has his goals in mind. With Collin’s transformation, not only has he lost 17 lbs but he’s also gaining more confidence in the gym, learning how to push himself without bothering old injuries and improving in strength all around.

It’s been an awesome journey thus far watching him smash his goals! He’s got more he wants to achieve, so watch out! This beast is just getting started 💥🔥💪🏽🏋🏽‍♀️

Asian Ground Turkey and Green Bean Stir Fry Recipe

* 2 tbsp olive oil, divided
* 1 lb green beans, trimmed and chopped
* Salt and pepper, to taste
* 1 lb ground turkey
* 1/2 cup onion, chopped
* 3 cloves garlic, minced
FOR THE SAUCE:
* 1/4 cup low-sodium soy sauce
* 2 tbsp honey
* 2 tsp chili garlic sauce
* 1 tsp sesame oil
* 1 tsp fresh ginger, grated
* 1/4 tsp pepper
* 1/4 tsp red pepper flakes

Instructions
* In a large skillet, heat one tablespoon of olive oil over medium-high heat. Once the pan is hot, add green beans and season with a little salt and pepper.
* Sauté the green beans for about 6 minutes until they start to get a little char and are tender, but still crisp. We don’t want floppy green beans! Transfer the green beans to a bowl and set aside. 
* Drizzle the remaining tablespoon of olive oil in the hot skillet and add the chopped onion. Sauté the onion until fragrant and translucent, about 2 to 3 minutes. Add the garlic and sauté for an additional 30 seconds, being careful not to burn. 
* Add the ground turkey and brown until crumbled and turkey is fully cooked. 
* While the ground turkey is cooking in the skillet, whisk together soy sauce, chili garlic sauce, honey, sesame oil, ginger and seasonings. 
* Add the cooked green beans back into the pan and pour in the sauce, mixing well, making sure to completely coat the ground turkey and green beans. Let everything simmer for 2 to 3 more minutes, until sauce has thickened. Serve over hot rice and enjoy! .

Today’s spotlight goes to one tough cookie! This woman here was smacked by life a few times. She’s survived a rough past. She’s beat cancer! She’s living with Lupus. The entire time an obstacle appeared, Tricia just kept on pushing through the challenges. She never let cancer stop her. She’s not letting Lupus control her. She’s simply not letting a bad moment win. EVER.

Because this fire cracker is determined to rise above
any Sh!tty curve ball thrown her way , she’s reaching goals sooner than later with a big smile on her face!

This posture ensures your large latissimus dorsi muscles do the work, rather than your smaller upper traps and arms, by preventing your shoulders from shrugging or collapsing forward. Honey Garlic Salmon Recipe 👩🏽‍🍳

Ingredients
SAUCE
* 4 tbsp honey
* 2 tbsp soy sauce (all purpose or light soy sauce)
* 1 tbsp white vinegar (or sub with any other vinegar except balsamic)
* 1 large garlic clove (or 2 small) , minced
SALMON
* 2 salmon or trout fillets, skinless (6oz / 200g each)
* Olive oil
* Salt and pepper

Instructions
* Take salmon out of the fridge 20 minutes before cooking. Pat salmon skin dry with a paper towel and sprinkle with salt and pepper. 
* Whisk together the Sauce ingredients in a small bowl.
* Drizzle oil in a non stick fry pan and heat over medium high heat (or just under, if your stove runs hot). Place salmon in the pan, and cook the first side for 3 – 4 minutes until golden. Turn, then cook the other side for 2 – 3 minutes or until golden. 
* Pour Sauce over salmon. Cook for 1 minute or until it starts to thicken slightly. Check the side of the salmon to tell how cooked through the middle is – I like mine medium rare inside. (Note 1). If Sauce thickens too much before your salmon is cooked to your taste, just add water 1 tbsp at a time. 
* Remove onto serving plates. 
* Serve salmon drizzled with Sauce, sprinkled with sesame seeds and chives/shallots, if desired.

As of today Ellen’s stats are:
〰️ Down 20.6 lbs
〰️ Down 5+ inches
〰️ Increased muscle mass
〰️ Lowered body fat
〰️ Enhanced strength

What’s Ellen’s secret?
Ellen has completely took control of her health and wellness by eliminating foods that cause her body inflammation and irritation. She realized how yucky she felt when eating processed foods and she simply eliminated it! She continues to monitor her health not only with nutrition but with routinely check-ups and blood work. Ellen is dotting all the i’s and crossing all of the t’s to make sure her body is in top notch shape!

Ellen also takes care of her body by attending Small Group Training on the regular. In session she’s working on building more muscle, strengthening her bones and improving her overall performance, being better than the day before!

Colton and his mother came to be with a mission of learning proper form in the gym, toning up and strengthening his athletic performance. He in fact is doing all the above! Since joining Empire, his muscle mass has increased. His form has drastically improved in his lifts. He’s doing phenomenal in baseball and has even received Player Of The Game this previous weekend.

Colton’s mother and I have tagged team on his nutrition, showing him the importance of protein and eating whole foods. From the kitchen, to the gym and on the field…Colton chose to become better in each area AND he’s doing just that!

This middle schooler is kicking butt this year. He’s certainly having the best year yet! I’m proud of this young man and all that he’s accomplished thus far. There’s more victories in store, he’s not done bringing the heat🔥🔥

👩🏽‍🍳Ground Turkey and Sweet Potato Skillet Delight

Ingredients:
1 lb (450g) ground turkey
2 medium sweet potatoes, peeled and diced
2 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp chili powder (optional, for heat)
1 cup kale or spinach, chopped
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Cook the Sweet Potatoes

Instructions:
Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced sweet potatoes and sauté for 8-10 minutes until softened and lightly browned. Remove from the skillet and set aside.
Brown the Turkey

In the same skillet, heat the remaining olive oil. Add ground turkey and cook for 5-7 minutes until browned and fully cooked, breaking it apart with a spoon.
Sauté Aromatics

Add onion and garlic to the skillet with the turkey. Sauté for 2-3 minutes until fragrant.
Season and Combine

Stir in smoked paprika, cumin, chili powder, salt, and pepper. Mix well.
Return the cooked sweet potatoes to the skillet and toss to combine.
Add Greens

Stir in chopped kale or spinach and cook for 2-3 minutes until wilted.

Mexican Shredded Crockpot Chicken

Ingredients:

One Pot Mexican Rice & Chicken

Ingredients:

MEXICAN SPICE MIX
* 2 tsp garlic powder (or 2 garlic cloves, minced)
* 2 tsp paprika
* 2 tsp cumin powder
* 1 3/4 tsp salt
* 1/2 tsp cayenne pepper (Note 1), optional
* Black pepper
CHICKEN
* 5 chicken thighs, bone-in, skin on (Notes 2 and 3)
* 2 tbsp olive oil
* 1 tbsp lime juice
RICE
* 1 small onion , peeled and diced (or 1/2 large)
* 1 garlic clove , minced
* 1 red capsicum (bell pepper), diced or sliced
* 1 cup long grain rice , uncooked (Note 4)
* 1 cup chicken stock/broth , low sodium (or vegetable stock)
* 3/4 cup tomato puree

Turkey Spaghetti with Spaghetti Squash

Ingredients
* 1 large spaghetti squash , about 3 to 4 pounds
* 3 tablespoons olive oil , divided
* 1 large onion , chopped
* 1/2 teaspoon coarse salt
* 1 8-ounce package mushrooms, coarsely chopped
* 3 cloves garlic , chopped
* 1 pound ground turkey , chicken or beef
* 1 15-ounce can tomato sauce
* 2 tablespoons tomato paste
* 1 tablespoon balsamic vinegar
* 2 tablespoons chopped fresh basil
* 3 cups baby spinach or kale

Instructions
1. Preheat oven to 400°F. Cut spaghetti squash in half and use a spoon to scrape out the seeds. Brush 1 tablespoon olive oil on a baking sheet. Arrange squash, cut sides down on baking sheet. Place squash in oven an bake 35 minutes or until it can be pierced easily with a fork.
2. While squash is baking, add remaining olive oil to a large nonstick skillet and heat over medium high heat. Add onion and salt and cook 5 minutes or until softened.
3. Add mushrooms and garlic and cook 5 minutes, stirring occasionally, until mushrooms are tender.
4. Add ground turkey and cook 5 minutes, until turkey is no longer pink, stirring to break up turkey.
5. Add tomato sauce, tomato paste, balsmamic vinegar and basil. Bring to a boil over high heat. Reduce heat and simmer 10 minutes.
6. Stir in spinach and cook 1 minute or until wilted. 
7. Remove spaghetti squash from oven and cool for about 10 minutes or until cool enough to handle. Use a fork to gently pull the squash flesh from the peel and to separate the flesh into strands. The strands wrap around the squash horizontally — rake your fork in the same direction as the strands to make the longest “noodles”.
8. Serve the meat sauce over the spaghetti squash.
